- Smoked sausage or Italian sausage: 400 g (14 oz), sliced into 1 cm rounds
 - Baby potatoes: 600 g (1.3 lbs), halved
 - Yellow onion: 1 large, sliced

 - Garlic: 2 cloves, minced
 - Fresh parsley: 2 tbsp, chopped

 - Smoked paprika: 1 tsp
 - Salt and black pepper: to taste

Instructions
- Brown the sausage:
 - Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5&7 minutes. Remove sausage from the skillet and set aside.
 - Cook the potatoes:
 - Add the remaining olive oil and butter to the skillet. Add potatoes and cook, stirring occasionally, until they start to turn golden and become fork-tender, about 10&12 minutes.
 - Soften the vegetables:
 - Add the onion and bell peppers to the skillet. Sauté for 5 minutes until softened.
 - Add aromatics and seasonings:
 - Stir in the garlic, thyme, rosemary, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
 - Combine and finish:
 - Return the sausage to the skillet. Stir well to combine and cook for another 3&5 minutes, letting the flavors meld.
 - Serve:
 - Remove from heat. Sprinkle with fresh parsley and serve hot.
