A comforting, creamy casserole featuring tender chicken, cheesy Alfredo sauce, and soft tortillas, all baked to golden perfection. Perfect for a family dinner or potluck.

I first made this Chicken Alfredo Tortilla Bake after searching for something cozy yet different for our weekly family dinner. The kids love the cheesy sauce and soft tortillas, and it quickly became a requested favorite for both casual nights and special occasions.

Ingredients

  • Cooked chicken breast: 2 cups, shredded or diced
  • Alfredo sauce: 2 cups (homemade or store-bought)
  • Mozzarella cheese: 1 cup, shredded
  • Parmesan cheese: 1/2 cup, grated
  • Ricotta or cottage cheese: 1 cup
  • Fresh baby spinach: 1 cup, chopped
  • Onion: 1/2 cup, finely diced
  • Garlic: 2 cloves, minced
  • Flour tortillas: 6 large
  • Dried Italian herbs: 1/2 teaspoon
  • Black pepper: 1/4 teaspoon
  • Salt: 1/2 teaspoon (adjust to taste)
  • Chopped fresh parsley (optional): 1/4 cup, for garnish

Instructions

Prepare for baking:
Preheat oven to 375°F (190°C). Grease a 9x13-inch (23x33 cm) baking dish.
Sauté vegetables:
In a skillet over medium heat, cook onion in a bit of olive oil for 2 to 3 minutes until translucent. Add minced garlic and cook for about 30 seconds until fragrant.
Add spinach:
Stir in chopped spinach, cooking until wilted, about 1 minute. Remove mixture from heat.
Make filling:
In a large bowl, combine cooked chicken, sautéed vegetables, ricotta or cottage cheese, 1/2 cup mozzarella, 1/4 cup Parmesan, Italian herbs, salt, and pepper. Mix well.
Layer base:
Spread 1/2 cup Alfredo sauce over the bottom of the prepared baking dish.
Fill and roll tortillas:
Place a tortilla flat. Spoon about 1/6 of chicken mixture down the center, roll up, and place seam-side down in baking dish. Repeat with all tortillas and filling.
Add topping:
Pour remaining Alfredo sauce evenly over rolled tortillas. Sprinkle with reserved mozzarella and Parmesan cheese.
Bake:
Cover dish with foil. Bake for 20 minutes. Remove foil and bake an additional 10 minutes until golden and bubbly.
Finish:
Let rest for 5 minutes. Garnish with fresh parsley, if desired, before serving.
