Instructions
- Prepare for baking:
 - Preheat oven to 375°F (190°C). Grease a 9x13-inch (23x33 cm) baking dish.
 - Sauté vegetables:
 - In a skillet over medium heat, cook onion in a bit of olive oil for 2 to 3 minutes until translucent. Add minced garlic and cook for about 30 seconds until fragrant.
 - Add spinach:
