Ingredients

  • Cornbread Batter: 1 cup cornmeal, 1 cup all-purpose flour, 2 tbsp granulated sugar, 1 ½ tsp baking powder, ½ tsp baking soda, ½ tsp salt, 1 cup buttermilk, 2 large eggs, ¼ cup unsalted butter (melted and cooled)

Instructions

Preheat & Prepare:
Preheat oven to 400°F (200°C). Lightly grease a cornbread stick pan or a standard baking sheet lined with parchment.
Mix Dry Ingredients:
Whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl.
Mix Wet Ingredients:
In a separate bowl, whisk together buttermilk, eggs, and melted butter.
Combine Batter:
Pour the wet ingredients into the dry and mix until just combined. Do not overmix.
Shape Cornbread Sticks:
Divide batter evenly into the wells of a cornbread stick pan or shape 12 logs, about 4 inches long, on a baking sheet.
Bake Cornbread:
Bake for 10–12 minutes, until just set and lightly golden. Let cool slightly.
Reduce Temperature:
Reduce oven to 375°F (190°C).
Wrap With Bacon:
Carefully wrap each cornbread stick with a strip of bacon, overlapping and securing the ends underneath.
Bake Again:
Arrange sticks seam side down on a wire rack over a baking sheet. Bake for 15–18 minutes, or until bacon is crisp. Turn once halfway for even browning.
Serve:
Let cool slightly before serving.
