# Directions:

01 - Set oven to 375°F. Grease a 9x13-inch casserole dish thoroughly.
02 - In a large skillet over medium-high heat, cook ground beef until fully browned. Drain excess fat if present.
03 - Add diced onion, red bell pepper, and minced garlic to the skillet. Cook for 3 to 4 minutes until softened.
04 - Stir in chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for one minute until fragrant.
05 - Add uncooked rice, diced tomatoes with their juice, tomato sauce, and beef broth to the skillet. Stir until well combined.
06 - Fold in black beans and 1 cup of shredded cheddar cheese evenly into the mixture.
07 - Move the combined mixture into the prepared casserole dish and spread evenly.
08 - Cover the dish tightly with aluminum foil and bake for 30 minutes.
09 - Remove foil, sprinkle remaining 1/2 cup shredded cheddar cheese on top, then bake uncovered for an additional 10 minutes until cheese melts and rice is tender.
10 - Allow casserole to rest for 5 minutes before serving. Optionally garnish with chopped cilantro, sliced jalapeños, and sour cream.
