I made a big batch of these cookies last December and brought them to both our Hanukkah and Christmas parties. Every cookie disappeared in minutes—kids and adults loved the chewy chocolate base and gooey marshmallows!
Ingredients
- All-purpose flour: 2 cups (250 g)
- Unsweetened cocoa powder: 1/2 cup (50 g)
- Baking soda: 1 tsp
- Fine sea salt: 1/2 tsp
- Unsalted butter (softened): 1 cup (225 g)
- Light brown sugar (packed): 1 cup (200 g)
- Granulated sugar: 1/2 cup (100 g)
- Eggs: 2 large
- Vanilla extract: 1 1/2 tsp
- Semisweet chocolate chips: 1 1/2 cups (270 g)
- Mini marshmallows: 1 1/4 cups (60 g)
- Walnuts or pecans (chopped): 1 cup (120 g)
- Festive holiday sprinkles (blue & white for Hanukkah, red & green for Christmas): 1/2 cup (100 g)
Instructions
- Prepare Sheets:
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Mix Dry:
- Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl. Set aside.
- Cream Butter & Sugars:
- Cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add Eggs & Vanilla:
- Beat in eggs one at a time, then add vanilla extract and mix until smooth.
- Combine & Fold In:
- Gradually add dry ingredients to wet mixture, mixing just until combined. Fold in chocolate chips, nuts, and 3/4 cup mini marshmallows.
- Shape & Top:
- Scoop rounded tablespoons of dough onto baking sheets, spacing 2 inches apart. Press on extra marshmallows and sprinkles.
- Bake:
- Bake cookies for 10 to 12 minutes, until edges are set but centers remain soft.
- Cool:
- Cool on baking sheets for 5 minutes, transfer to wire racks to cool completely.
