I made this charcuterie board for a weekend brunch with friends, and it quickly became the star of the table. The combination of soft banana bread and all the colorful toppings gave everyone something to love.

Ingredients

  • Caramel Banana Bread: 2 ripe bananas (mashed), 100 g (1/2 cup) unsalted butter (melted), 120 g (1/2 cup) light brown sugar, 2 large eggs, 1 tsp vanilla extract, 200 g (1 2/3 cups) all-purpose flour, 1 tsp baking soda, 1/4 tsp salt, 100 g (1/2 cup) caramel sauce (plus extra for drizzling)
  • Fruits & Accompaniments: 1 cup strawberries (halved), 1 cup blueberries, 2 kiwis (sliced), 2 bananas (sliced), 1 apple (sliced), 1/2 cup seedless grapes, 1 cup mini pretzels, 1/2 cup chocolate-covered almonds
  • Spreads & Sweets: 1/2 cup cream cheese (softened), 1/2 cup Nutella or chocolate-hazelnut spread, 1/2 cup peanut butter or almond butter, 1/4 cup caramel sauce (for dipping)

Instructions

Prepare the Caramel Banana Bread:
Preheat oven to 175°C (350°F). Grease a 9x5-inch loaf pan. In a large bowl, combine mashed bananas, melted butter, brown sugar, eggs, and vanilla. In a separate bowl, whisk together flour, baking soda, and salt. Add dry ingredients to wet mixture and stir until just combined. Fold in caramel sauce. Pour batter into loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Cool completely, then slice into 1 to 2 cm thick pieces.
Assemble the Charcuterie Board:
Arrange banana bread slices in the center of a large serving board or platter. Surround with groups of strawberries, blueberries, kiwis, banana slices, apple slices, grapes, mini pretzels, and chocolate-covered almonds. Place cream cheese, Nutella, peanut or almond butter, and caramel sauce in small bowls and add to the board. Drizzle extra caramel sauce over the banana bread if desired. Serve immediately.
