# Directions:

01 - In a bowl, combine the thinly sliced turkey breast with soy sauce, cornstarch, and black pepper. Mix thoroughly to ensure the turkey is evenly coated. Set aside to marinate while preparing the vegetables.
02 - Bring a medium pot of salted water to a rolling boil over high heat. Add the trimmed and cut green beans and blanch for 2 minutes. Immediately drain the beans and rinse them under cold running water to rapidly cool and preserve their crispness. Set aside.
03 - Heat 1 tablespoon of butter in a large skillet or wok over medium-high heat until shimmering. Add the marinated turkey slices in a single layer, ensuring not to overcrowd the pan (work in batches if necessary). Stir-fry for 3-4 minutes, or until the turkey is evenly browned and cooked through. Remove the seared turkey from the skillet and set aside.
04 - Add the remaining butter to the same skillet over medium heat. Once melted, add the finely minced garlic (and minced ginger, if using) and sauté for approximately 30 seconds until fragrant, being careful not to burn.
05 - Introduce the blanched green beans and sliced red bell pepper to the skillet with the garlic. Stir-fry for 2-3 minutes until the vegetables reach a tender-crisp consistency.
06 - Return the seared turkey to the skillet with the vegetables. Drizzle with fresh lemon juice and honey (or maple syrup). Toss all ingredients together to ensure they are well coated with the sauce. Heat through for 1 minute. Season with salt according to your taste preference.
07 - Remove the skillet from the heat. Sprinkle with the sliced spring onions, sesame seeds, and chopped fresh parsley or cilantro as desired. Serve immediately.
