Cilantro Lime Shrimp Mango Salsa (Print Version)

01 - 1 lb large shrimp, peeled and deveined
02 - 2 tbsp olive oil
03 - 2 tbsp fresh lime juice
04 - 1 tbsp fresh cilantro, finely chopped
05 - 2 garlic cloves, minced
06 - 1 tsp ground cumin
07 - 1/2 tsp chili powder
08 - 1/2 tsp kosher salt
09 - 1/4 tsp black pepper

→ Mango Salsa

10 - 2 ripe mangoes, diced
11 - 1/2 cup red bell pepper, diced
12 - 1/4 cup red onion, finely chopped
13 - 1 jalapeño, seeded and finely chopped
14 - 1/4 cup fresh cilantro, chopped
15 - 2 tbsp fresh lime juice
16 - 1/4 tsp salt

→ Bowls

17 - 2 cups cooked white or brown rice, warm
18 - 1 cup shredded red cabbage
19 - 1 avocado, sliced
20 - Lime wedges, for serving

# Directions:

01 - In a medium bowl, toss shrimp with olive oil, lime juice, cilantro, garlic, cumin, chili powder, salt, and pepper. Marinate for 10 minutes.
02 - In a separate bowl, combine mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt. Mix gently and set aside.
03 - Heat a large skillet over medium-high heat. Add marinated shrimp and cook for 2 to 3 minutes per side until pink and opaque.
04 - Divide cooked rice among four bowls. Top with shredded cabbage, avocado slices, mango salsa, and cilantro lime shrimp.
05 - Serve immediately with lime wedges on the side.
